Oatmeal Date Cookies
Makes 8 cookies, but trust, you’ll want more.
Ingredients
- 1/2 cup rolled oats. Don’t use instant oats.
- 1/2 cup mashed bananas (1 small banana)
- 1/4 cup peanut butter
- 1/2 tsp vanilla extract
- A pinch of salt
- 2-3 tbsp dark chocolate, chopped (we use Ghiradelli’s 100% cacao unsweetened chocolate)
- 1-2 tbsp dried medjool dates, diced
Instructions
- Mash banana with PB.
- Add the rest of the ingredients + mix.
- Refrigerate dough for 10 minutes. In the meantime, preheat oven to 350 degrees F.
- Using a spoon, scoop dough onto a cookie sheet if you have one (We just used tin foil).
- Bake 14-16 minutes.
- Cool + serve!
